Black Bean Avocado Brownies – who knew it could be so good!
- 1 large egg
- 1-15oz can black beans, rinsed and drained
- 1/2 ripe avocado
- 1T vanilla extract
- 1/2c packed dark brown sugar
- 2/3c unsweetened cocoa or cacao powder
- 1t coconut oil
- 1/4t baking soda
- 1/4t baking powder
- 1/3c chocolate chips, plus 2T for sprinkling on top
Preheat oven 350 degrees F.
Grease an 8X8″ pan
Place egg, black beans, avocado, vanilla, and brown sugar in a Vitamin or food processor and blend until smooth. Add in cacao powder, coconut oil, baking soda, and baking powder blend until smooth. Batter will be thick, if you need it to be thinner to blend use a tablespoon or two of coconut milk. The batter needs to be thick to give you a fudgy brownie. Fold in chocolate chips and spread evenly into baking pan. Sprinkle the remaining 2T of chips on top.
Bake 25-30 minutes or until toothpick comes out clean.
Let cool and store in the refrigerator.
